ABOUT SALMON:

Do you sell any farmed salmon?
We do NOT sell farmed salmon. We sell only 100% wild Alaska salmon and seafood! Wild Salmon is better for you, better for the environment, and has a superior taste. To learn more about the differences between wild and farmed salmon, you can visit www.alaskaseafood.org.

Wild Alaska Salmon come from the cleanest waters and healthiest salmon runs in the world. They bring home all the nutrients of the sea providing for high levels of Omega 3, and superior taste. Alaska's Salmon Fisheries are among the best managed fisheries in the world! They were the first to be recognized with an eco label by the Marine Stewardship Council as a sustainable and well managed fishery assuring healthy eco systems and healthy practices.

Farmed salmon are injected with chemicals, colorings and antibiotics. They have much higher traces of PCBs, pesticides, & dioxins causing a food safety concern. They have much less heart healthy Omega 3 oils than wild salmon. Escapees are a threat to indigenous wild salmon and the actual farms are destructive to the environment. There are so many salmon choices, how do I choose a salmon? All of our salmon are wonderful, or we would not sell them all! Below are the characteristics of each salmon to make your shopping easier. Our favorite has long been the sockeye with a beautiful red flesh and great flavor. King is a close second with a velvety texture. Coho is milder, and Keta and Pink are economical and great for recipes! Still stuck? Choose a sampler pack and taste a few side by side!

SOCKEYE (RED)-This is the premium salmon and our most popular. A high Omega-3 oil content makes this salmon one of the most flavorful. Its deep red flesh gives it a beautiful presentation. It is also the firmest of the salmon species.
CHINOOK (KING)- The Largest of all wild salmon. This fish has the highest Omega-3 oil content, a velvety texture and the richest flavor. Large orange flakes and a buttery taste.
COHO (SILVER)- Known as a great sport fish. Milder and leaner than both sockeye and king. The flesh is a beautiful rosy color with a medium size flake.
KETA (CHUM)- Firm pink flesh, lean and mild flavor. Wonderful for those who may not like a bold flavored fish.
PINK (HUMPY)- The most abundant species and smallest. Pinks have a mild and delicate flavor, lean and pink flesh and are the most economical which makes them perfect for recipes.

What is the difference between salmon lox and hot smoked salmon?
Our Sockeye Lox or Nova Lox is lightly cured and then smoked at a cool temperature for several hours. This produces a succulent velvety raw texture that is typically sliced thin and accompanied with capers and red onion on a bagel. This style is traditional to Northern Europe and is popular in the US east coast delis. Our Sockeye Lox has won awards for best in the state and is one of our favorite products.

Hot smoked salmon is lightly brined then smoked at a hot temperature for a short time. This produces a cooked and flaky texture, very distinct from lox. This style is traditional to Alaskan Natives. We then go an extra step to retort the salmon (flash cook it in a gold foil pouch), which preserves the salmon naturally and provides a very moist, healthy and convenient product. This is our signature salmon and we have won prestigious awards for this smoked salmon too.

Is anything added to your smoked salmon?
All of our products are 100% natural. We believe in good health and great taste! We brine our salmon in a very light brown sugar and sea salt brine before smoking with alderwood or wine oak barrels. Then our salmon is retorted (flash cooked) and sealed in gold foil pouches which naturally preserves our salmon. Nothing more, nothing less. Gourmet, healthy and easy.

Does your smoked salmon need refrigeration?
Our hot smoked salmon is shelf stable, like any canned product would be, for up to 5 years. It does not need refrigeration until the package is opened. Then any leftovers can be put in an airtight container and refrigerated for up to 2 weeks or frozen for up to 3 months.

How should I serve the salmon?
Your hot smoked salmon is ready to serve right out of the package. Try it flaked onto a cucumber round with a sprig of fresh dill, or check out our recipe link for more serving suggestions like smoked salmon chowder!

How much salmon should I use for my party?
Appetizer portions are generally 2oz per person. Dinner portions can be anywhere from 4oz to 8oz per person. Pasta with smoked salmon cream sauce may include just 3oz per person.

All Alaska Salmon is certified by the Marine Stewardship Council. This eco labeling assures that the salmon is well managed and sustainable providing for healthy future stocks. This means it is a great choice for a healthy environment and a healthy you.

Are your products Kosher?
All of our smoked salmon, lox, smoked black cod, frozen salmon, frozen halibut and smoked halibut are certified Kosher. Products that are NOT Kosher are our crab, shrimp, reindeer salami, reindeer stix, salmon jerky, etc.

ABOUT FROZEN SEAFOOD:
Is frozen better than fresh fish?
Our frozen fish is better than fresh! It is flash frozen at a very low temperature (-40) as soon as it is brought in to the dock. This seals in all the nutrition and fresh flavor that you may miss from the fish that took two extra days to arrive on your plate fresh. Frozen is also easy to prepare as most seafood can even be cooked frozen! See our recipe page for details.

How is frozen seafood shipped?
We ship frozen items in vacuum sealed portions. We place these into Styrofoam boxes with iced gel packs. Frozen items are all shipped FedEx Overnight except our Sockeye Lox and Cold Smoked Black Cod which are more stable and ship FedEx2 Day.

When do frozen orders ship?
Frozen orders take up to 24 hours to process. They ship on Monday, Tuesday or Wednesday ONLY. Why do frozen products ship separate from your other products? We have a separate warehouse to hold frozen orders, so they will usually ship separate from all non-perishable items.

Can I refreeze my seafood?
The seafood is flash frozen into individual vacuum sealed portions. As long as the fish is cool to the touch when it arrives, and the vacuum seal is not broken, it is safe to refreeze. This will not compromise the quality at all. Seafood will keep for 6 months in your freezer.

Smoked Salmon Handling Instructions
We believe in health and good taste! This product is of the highest quality Wild Alaskan salmon. We do not add preservatives.

All of our smoked fish is hot smoked then retorted in a gold foil pouch. This retorting process slightly cooks the fish in its own juices giving a moist flaky texture. You may store the fish at room temperature for up to 5 years, giving you the convenience of gourmet smoked salmon without the need to refrigerate. Perfect for camping, hiking, picnics, parties, or your own snack or favorite recipe.

When opening a fish pouch, be careful not to spill the juices inside. You may want to open over a sink. The liquid is a healthful and flavorful fish oil that was naturally released from the fish when retorting. The oil, which contains healthful omega 3, is a wonderful addition to any dips you are making or to our smoked salmon chowder recipe.

Once the pouch has been opened, it can be stored in an airtight container in the refrigerator for up to a week. If you want to keep the open product longer, it should be frozen.

King Crab Handling Instructions
We believe in health and good taste! This product is of the highest quality wild Alaskan Seafood. We do not add preservatives.

The crab should be refrigerated or frozen as soon as possible. It is normal for some defrosting to take place during shipping.

All of our Giant King Crab legs are steamed, flash frozen, ice dipped and individually hand packed into your box. Shoulder, leg and crab meat have been included and are all wonderful for recipes or served warm with butter and lemon wedges. Please find more recipes on our website. All crab is delivered live to the docks and quickly processed to assure the freshest product. The crab is steam cooked and does not require further cooking. Simply thaw the crab and serve in a tossed salad or with butter and lemon. You may wish to heat the crab. We recommend boiling an inch of water in a large sauce pan and steaming the crab for 5-10 minutes or until hot. You may choose to dunk the crab in boiling water for 2-3 minutes instead. We caution against overcooking these beauties, as they may become dried out.

Shrimp Handling Instructions
We believe in health and good taste! This product is of the highest quality wild Alaskan seafood. We do not add preservatives. The shrimp should be refrigerated or frozen as soon as possible. It is normal for some defrosting to take place during shipping.

All of our shrimp are taken directly from the fishermen and quickly flash frozen. Shrimp are individually ice dipped to keep in all the freshness and great taste. Because they are individually ice dipped, it is easy to take out just a few for dinner without the need to defrost the whole package. It is also normal for the females to be holding their clutch of eggs. These are a delicacy and a beautiful garnish to your dish. Shrimp last for 3-6 months in the freezer and about 3-5 days cooked and in the fridge. The shrimp are raw, headed, and have shells on. Our suggestion is to peel the shrimp and saute for 5-6 minutes in garlic, butter and parsley, or try one of the recipes on our website. This goes well with a good white wine.

When will my order ship?
We ship non perishable orders within 48 hours of your order. We ship Monday-Saturday. Perishable orders ship on Monday, Tuesday, and Wednesday ONLY. If you place a frozen shrimp order on Wednesday morning - Friday morning, it will ship on the next Monday. Orders placed on the weekend generally ship that Tuesday.

Why is shipping so expensive?
We live on a gorgeous remote island in Alaska. This is where we catch your great seafood. Things take a little more time and a little more money to come from this far away. We promise that it will be worth the extra effort!

What if my order is late?
We do our best to get your packages delivered on time. We live on a very foggy island which sometimes causes delays. If your order is late for another reason, besides weather, we will make it right with a refund, or replacement.

Are your seafoods a good choice for pregnant women and nursing mothers?
YES! Alaskan seafood is a wonderful choice for pregnant women and nursing mothers. It is not only safe, but essential for proper brain and nervous system development in infants. Salmon is especially important, providing wonderful omega 3 which is known to decrease the rates of postpartum depression, and is important to brain development of the baby especially in the last trimester and first three months of breastfeeding. DHA and ARA fatty acids found in wild salmon are responsible for higher IQs and visual acuity in infants.
